Summary

Oversee and manage all areas of Feather Falls Brewing Company and Restaurant and make decisions on matters of importance. Responsible for managing the daily operations of the Brewery, Restaurant and Entertainment Venue including the selection, development and performance management of employees. The Restaurant Manager is responsible for overseeing the inventory and ordering of food, beer, liquor and operating supplies to optimize profits and ensure that customers are satisfied with their total experience.

Essential Duties and Responsibilities include, but are not limited to the following:

  • Guest Service > First priority is to ensure our guest service is embedded in the Foundation of the Brewery Restaurant to include Training & Re-Training employees on Guest service standards
  • Operate Restaurant > in order to ensure that the Brewery FOH standards are being implemented & Maintained it is required to actually be physically present in and Working in the restaurant > Frontline with Employees Specifically on Nights, Weekends & Holidays
  • Hire, counsel, terminate, and recommend for additional training, food and brewery service staff.
  • Responsible for ensuring that all financial (invoices, reporting) and personnel/payroll related administrative duties are completed accurately, on time and in accordance with company policies and procedures.
  • Interacts with guests and employees on a daily basis.
  • Adhere to company standards and service levels to increase sales and minimize costs, including food, beverage, supply, utility, and labor costs.
  • Maintain & Enhance Cleanliness of FOH Operations in all areas to include the below.
  • Enforce sanitary practices for food and beer handling, general cleanliness including side stations, and maintenance of kitchen and dining areas. Ensure compliance with operational standards, company policies, federal/state/local laws, and ordinances.
  • Ensure brewery waste is handled according to EPA standards.
  • Responsible for ensuring consistent high quality of food and beverage preparation and service.
  • Maintain professional restaurant image, including Brewery and restaurant cleanliness, proper uniforms, and appearance standards.
  • Works with Purchasing Manager and Executive Chef to monitor inventory procedures.
  • Estimate food and beverage costs. Work with Purchasing Manager to assure purchasing/receiving invoicing is accurate and complete. Attention to quality of product received and rotation of stock. Supervise portion control and quantities of preparation to minimize waste.
  • Review food orders with Executive Chef, Beer Quality and seasonal flavors with Brewmaster for consistency.
  • Investigate and resolve complaints concerning food or beer quality and service.
  • Conduct orientation, explain the Feather Falls Casino philosophy, and implement the training of new employees.
  • Maintain accurate and up-to-date plan of restaurant and brewery staffing needs. Prepare schedules and ensure the restaurant is staffed for all shifts and events.
  • Develop employees by providing ongoing feedback, establishing performance expectations and by conducting performance reviews
  • Review Entertainment schedule and talent used with marketing department.
  • Assist marketing with all functions of Brewery and Entertainment promotions and production.
  • Controls usage of room along with the F&B Director, General Manager and Marketing Director for different functions.
  • Records, confirms, communicates, and organizes weekday reservations and weekend “heads up” for parties of 10 or more and ensures all service is up to standards.
  • Maintains favorable working relationship with all company employees to foster and promote a cooperative and harmonious working climate which will be conducive to maximum employee morale, productivity and efficiency/effectiveness
  • Keeps Director of Food & Beverage fully informed of all issues and takes prompt corrective action where necessary or suggest alternative courses of action
  • Must be able to work weekends, nights, and holidays.
  • Other duties as directed by the F&B Director.
  • Recording and reporting any suspicious activity as defined by the Bank Secrecy Act (Title 31) and Feather falls Casino Internal control policy Suspicious Activity Compliance Program.

Supervisory Responsibilities

Responsible for all Brewery and restaurant employees and as stated above. Works with Brewmaster to ensure quality, consistency, volume and product availability.

Education and/or Experience

College degree is preferred. Bachelor’s degree in restaurant management is desirable. A combination of experience and education will be considered as an alternative.

 

Experience

Five to ten years experience in Food & Beverage Management in a faced-paced, high-volume full-service restaurant. Entertainment and promotions experience desired. Experience in a Brewery preferred.

  • Must have a hands-on management style, working on the floor with guests and employees.
  • Experience and understanding of team service.
  • Proficient in the following dimensions of restaurant functions: food planning and preparation, purchasing, sanitation, security, company policies and procedures, personnel management, recordkeeping, and preparation of reports.
  • Must be computer literate, to include proficiency in MS Word and Excel.

Language Skills

  • Ability to read and interpret documents such as safety rules, operating and procedure manuals.
  • Ability to communicate effectively with other managers, supervisors, vendors, and suppliers.   

Mathematical Skills

Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to compute rate, ratio, and percent.

Reasoning Ability

Ability to apply common sense understanding to carry out instructions furnished in written, oral, or diagram form. Ability to deal with problems involving several concrete variables in standardized situations. Ability to define problems, collect data, establish facts and draw valid conclusions.
